I'm always cooking for two.
I find it super easy and CHEAP, though!
Sometimes there are recipes that have to be adjusted for two. I like to buy organic spinach in those plastic containers and throw together this quick salad. We absolutely never use ketchup in this house [something about it being anti-Chicagoan? I just don't care for the taste], but we have to keep it around for this salad dressing...
Here's my quick dressing:
1/2 cup ketchup
2 Tbsp garlic infused olive oil
1 Tbsp balsamic vinegar
1 tsp brown sugar
dash of salt
[my favorite toppings: Greek feta & slivered almonds]
